Turkey is so much more versatile than many people believe and can be cooked in so many exciting ways. This recipe focuses on pulled turkey, tossed with an incredible Chipotle barbecue sauce. The turkey can be eaten just like that, but really explodes with flavor when served with some salsa verde, corn salsa and crunchy tostadas.

Osso Bucco is characterized by simple ingredients that are slow cooked together until they become a powerful and complex mix of flavors. Traditionally this recipe is made with veal shanks, but for mine I used ox tails as I really like the texture of them when cooked and where I live, they are often much easier to find.

An Italian Chicken cutlet is a simple, thin cut of chicken breast, breaded and deep fried. Usually the cutlet is served with red sauce on a sandwich and some other simple ingredients. For this recipe, I switched things up a bit by smoking the breast prior to deep frying and by replacing the familiar red sauce with a ketchup based barbecue sauce.
