Smoked Pineapple Cake

 
 

A few months ago, I was tinkering around with different things I could do with cast iron, and I stumbled across a book that talked about incorporating smoke into unconventional foods, like cakes.

I loved this idea, so decided to give it a go on one of my childhood favorites, the upside-down pineapple cake. The point of this cake, is that you cook it from the bottom up, with the intent that when you flip it out of the pan, after it has been done cooking-You see the beauty underneath.

When cooking cakes on the smoker, definitely be mindful of the level of smoke making contact with the food. Wet foods are more likely to be overpowered with smoke and your cake can do a lot of soaking up if you aren't careful.

I smoked this recipe on the Nomad Grill with an eight-inch cast-iron skillet. Be mindful of the handle and it will fit in there with no problem.

What you will need


  • 1 1/2 cups flour
  • 1 t Baking soda
  • 1/4 t Baking powder
  • 1/2 t salt
  • 6 T unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/3 cup sour cream
  • 1 t vanilla
  • 1/3 cup whole milk
  • For the topping:
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • Pineapple slices
  • Maraschino Cherries

Method


1. Pour 1/4 cup melted butter into an ungreased 9 inch cast iron skillet and sprinkle evenly, with all of the brown sugar.

2. Arrange pineapples around the bottom of the pan, filling each center with a cherry. Place cast iron pan in the fridge, until the batter is ready.

3. Whisk cake flour, baking powder, baking soda, and salt together.

4. Using a stand mixer, beat butter on high until smooth and creamy. Add sugar and beat until creamed.

5. On high speed beat in egg whites until well combined, then beat in sour cream and vanilla.

6. Pour dry ingredients into wet ingredients and mix at low speed. As the mixture blends, slowly add milk. Beat until ingredients are just combined.

7. Pour cake batter over topping and place inside your 350F or so smoker for about 45 minutes. If cake begins to brown more than we would like, tent the pan in foil while smoking. The cake is done, when a clean toothpick can be inserted and removes mostly clean.

8. Cool for about 20 minutes, before flipping out the cake and slicing.
