Smoked Apple Crisp

 
 

When I was a kid, one of the only desserts I knew how to make was a super simple apple pie. It involved store brought pastry, stewed apples and not much else. On a Sunday night, my mum was usually too tired to be bothered cooking, so I would step up with my "incredible" pie.

Mercifully, my cooking skills have got better, but my enjoyment of simple fruit desserts has endured. This recipe is one of my new favorites.

When smoking stuff outside of meat, like always it is important to be careful of how much smoke you use, but a little bit really does take this recipe to the next level. Do yourself a favor and drizzle some Apple Cider syrup and Caramel Syrup from Athol Orchards. You can pick some up here.

What you will need


  • 4 medium sized apples
  • 2 Tablespoons rolled oats
  • 3 Tablespoons unsalted butter
  • 1/3 Cup all purpose flour
  • 1/3 Cup brown sugar
  • 1/4 Teaspoon cinnamon
  • Pinch nutmeg
  • Juice 1/2 lemon

Method

1.Setup your grill for indirect smoking to about 250F. Use a subtle fruit wood for smoking and core apples.

2. Add all other ingredients together and mix thoroughly before spooning mixture into apples. Make sure to fill entire apple up with mixture, without leaving gaps in the centre.

3. Place apples into a foil tray and pour in 1/4 cup warm water. If needed, you can cover the apples and the tray with foil, to help them cook and avoid getting too much smoke.


4. Smoke until apples are soft and mixture is cooked through.

5. To serve, slice apples in half and drizzle with Athol Orchards Syrups and a scoop of vanilla ice cream.
