Smoking them low and slow adds a rich, subtle smokiness that balances the sweetness and brings a whole new layer of depth. The hint of smoke in a warm, gooey cookie? It’s unexpected in the best way possible.

Now let’s talk about ghee, specifically vanilla bean ghee from 4th & Heart. Ghee is butter’s more refined, flavorful cousin. It has a higher smoke point, which makes it perfect for smoked recipes like this, and it adds an ultra-buttery richness.  Ingredients

  • 3/4 Cup Brown Sugar
  • 3/4 Cup White Sugar
  • 1 Cup 4th & Heart Vanilla Bean Ghee
  • 2 ½ Cups All Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Kosher Salt
  • 2 Eggs
  • 1 Cup Chocolate Chips
  • Flaky Salt

 Method

  1. Preheat Smoker to 350F and add a fist sized chunk of your favorite mild fruit wood. I like Cherry.
  2. In a large bowl, cream sugar and Vanilla Bean Ghee until light and fluffy.
  3. Add eggs, flour, baking soda and salt. Mix until incorporated. Add chocolate chips and stir through.
  4. Line a cookie sheet with parchment paper and using a cookie scoop, drop 2 Tablespoon sized balls of dough across the cookie sheet.
  5. Smoke for 10-12 minutes. Sprinkle cookie with a pinch of flaky salt while warm. Let cool for 5 minutes before transferring to a cooling rack.
