Pork butt is about the easiest thing for someone to start learning how to smoke with. They are big, can take lots of smoke and are very forgiving of a variety of sins. Pork butt is actually the shoulder of the animal and when cooked low and slow, produces a juicy, smokey and delicious product. For this recipe, I have included a homemade rub, but realistically you could use just about any rub you like.
