Smoked Bone Marrow

 
 

Bone marrow is seriously one of the most underrated things to smoke. It is cheap, easy to cook and seriously delicious. Marrow is often called the butter of the gods and after you try it, you will definitely understand where the name comes from. It is creamy, fatty and packed with beef flavour.

This recipe shows how you can serve the marrow, spread out on crispy bread, but there are so many ways you can eat it! It is fantastic when added into gravy's, used as a steak topper or added to other foods as a way to increase the beefy flavour (I like including it in my sausage and burger mixtures). It is rich and packed with flavour (not to mention you can pick them up for about $2.50 a pound), so I like to incorporate it as much as I can.

I can't recommend trying this recipe enough! It is one of those foods that seems kind of strange, but once you have tried it-You will never look back!

What you will need


  • 4 large Marrow bones
  • Half stick/60 grams butter
  • 2 teaspoons crushed Garlic
  • Half Lemon
  • 4-5 Sprigs fresh Parsley
  • Crusty bread

Method

1. Soak your bone marrow overnight in salted water. This will help to draw out the blood and make it easy if you want to clean the remaining meat off of the bone.

2. Season liberally with salt and pepper.

3. Melt butter and mix in the crushed garlic before liberally coating the bone marrow.

4. Smoke the bones over 400F heat for 15-20 minutes until they have developed some good colour and the marrow begins to shrink up.

5. Once cooked, use a teaspoon to remove all of the marrow from inside the bone.

6. Roughly chop Parsley and marrow together before mixing in the juice of half a lemon.

7. Spread over crusty bread and enjoy!.
