Millionaire Bacon

 
 

Any time I am looking for a super simple, delicious snack or starter, millionaire bacon is my go-to. I smoked this bacon on the Nomad Grill which worked out great, but you could make this recipe on whatever smoker you have, just make sure you smoke the bacon indirect.

Millionaire bacon is great because you can use just about any ingredients you want, to get it just the way you like it. This recipe is a fairly simple version, which focuses on giving a sweet heat profile, but other things you could add to make it the way you want could be pineapple juice, maple syrup, caramel, chipotle or cayenne pepper.

Typically, I serve this bacon on a stick as a starter or snack, but you could crumble it on salad or inside devilled eggs. You could add a crumbled layer to pork ribs or just about about anything else you can think of. You are only limited by your imagination.

What you will need


  • 1 pack bacon
  • 1 cup brown sugar
  • 1 Tablespoon black pepper
  • 2 Tablespoons red pepper flakes

Method

1. Separate bacon and lay out flat on a large chopping board.

2. Mix brown sugar, pepper and red pepper flakes together until well incorporated and generously sprinkle over both sides of the bacon. Pat the rub down on the bacon to help it adhere.

3. Thread the bacon onto a long wooden skewer in a wave pattern, leaving about 2-3 inches of skewer on the flat end for a handle.

4. Preheat smoker to 350F and add cherry wood. Let wood burn until blue and place the bacon indirect.

5. Smoke until bacon is crispy and sugar is caramelized.

6. Serve bacon as a snack or starter on the skewer, or crumble up and use in salads, on potatoes or anything else you want!
