Christmas made easy with Schmidt Bros.

You never want to be the person responsible for messing up Christmas dinner and sometimes that pressure makes things a little chaotic.

The easiest way that I have found to make things a little more peaceful, is to make sure that I have the right tools for what I am cooking and most of all, that means having a complete set, of super sharp knives.

Smoked Lamb

 Ingredients

  • 4-5 lb Leg of Lamb

  • 7 cloves garlic, halved

  • 2-3 sticks Rosemary, cut into segments
  • 1/4 Cup Olive Oil
  • Kosher Salt to taste

Method

    1. Preheat smoker or oven to 425F and place a piece of your favorite smoking wood. For lamb, I think cherry is a good addition, as it adds great color and sweetness. Hickory or Oak are good options.
    2. Using a sharp knife, like the Schmidt Bros boning knife, cut crosses across the meat of the lamb. Press your finger inside the space to make sure you have enough room. 
    3. Insert a garlic clove half and a segment of rosemary into each cross. Lightly coat the exterior of the lamb with olive oil and seaosn generously with salt. Place lamb onto a wire rack, on a foil tray and place in your smoker/oven. Pour water into bottom of tray to catch drippings.
    4. Insert temperature probe into the thickest part of the lamb and place lamb into the smoker for ten minutes. After this time, reduce heat to 350F and cook until lamb hits an internal temperature of 130F. 
    5. Remove from the smoker and allow to rest for 30 minutes, lightly tented in foil.
    6. Slice lamb into 1/4 inch thick slices using your Schmidt Bros carving fork and brisket/carving knife. Serve immediately. 

Roast Potatoes

 Ingredients

  • 4 lbs Russett potatoes

  • 1/2 C Beef Tallow or Olive Oil

  • 1/2 Cup plain flour

  • 2 T Kosher Salt


 Method

  1. Preheat smoker or oven to 450F. Add 1/2 Gallon of water to a pot and add 2 T Kosher salt. Bring to boil.
  2. Peel and chop potatoes into halves or smaller, using the Schmidt Bros Butcher Knife You are trying to create large surfaces for crisping up.
  3. Add potatoes into the pot. Allow the pot to return to the boil and cook for ten minutes, until a knife will pass through the potato.
  4. Once potatoes are cooked, drain well and place back into the pot. Sprinkle evenly with flour and place lid on the pot. Shake the pot to spread the flour, as well as "fluff" the exterior of the potatoes.
  5. Add Beef tallow to an oven tray and preheat it for 10 minutes. Remove and add potatoes cut side down. 
  6. Roast for 20 minutes before turning all potatoes. Continue roasting for 20 minutes a time, flipping after each 20 minute period until all potatoes are browned and crispy.
  7. Remove from oven/smoker and place on serving tray. Salt heavily before serving.

Glazed Carrots with Pecans

 

 Ingredients

  • 1.5 lbs carrots, sliced diagonally

  • 2 T Butter

  • 1 t Minced fresh ginger

  • 1 Cup Brown Sugar

  • 1 1/2 Cups toasted Pecans


Method

1. Heat butter in a large skillet over medium heat. Add carrots and cook, stirring frequently until carrots are soft.

2. Add ginger and brown sugar and stir until sugar melts. About 2-3 minutes. 

3. Using the Schmidt Bros Butcher Knife  chop the pecans into smaller pieces. Add to the carrots and cook for 3-5 minutes, stirring frequently to make sure everything is well glazed.

5. Remove carrots from skillet and serve immediately.


 
 
 
 

Cranberry Bacon Green Beans

 

 Ingredients

  • 4 Slices thick cut bacon, cut into small "cubes"

  • 1 shallot, thinly sliced

  • 1/3 Cup dried cranberries

  • 2 lbs Green Beans

  • 2 Oz Crumbled Goat Cheese
  • Salt & Pepper to taste

 Method

1. Place cut bacon into a large skillet and cook over medium high heat until crispy. Use a slotted spoon to remove bacon to a plate, leaving bacon grease in the skillet. 

2. Reduce heat to medium and add sliced shallot and cranberries. Cook, stirring frequently, until shallot is softened. about 3-4 minutes. 

3. Add beans to skillet and cook until beans a tender, but still crisp. Season with salt and pepper. Return bacon to skillet and stir through,

4. Transfer beans to a serving plate and top with goat cheese. Serve while still warm.
