Carne Asada Tacos

Carne Asada is one of my favorite things and so I worked on a recipe for a long time, until I had, what in my mind-is the ultimate Carne Asada recipe.

To me, Carne Asada should be bright and flavorful-but also simple. It shouldn't need a thousand ingredients, just a few fresh ones.

Customize these tacos however you like best. Grill over your favorite wood for added flavor. Toast the tortillas to add an additional element and experiment with different salsa's and fresh toppings until it suits your tastes.

Ingredients

  • 2lbs Hangar Steak
  •  Juice 2 Limes
  • 1/2 Cup Orange Juice
  • 1 Cup Cilantro, diced
  • 1/4 Cup Olive Oil
  • 1 Minced Jalapeno
  • 2 Tablespoons White Vinegar
  • Salt & Pepper to taste

Taco Ingredients

  • Street Taco sized, flour tortillas
  • White Onion, diced
  • Lime Wedges
  • Salsa or Salsa Verde
  • Cilantro, chopped
  • Guacamole
  • Cotija Cheese, crumbled

Method

1. The night before you are planning on cooking, prepare your marinade and mix thoroughly. Add your hangar steak and coat with the mixture and allow to marinade overnight.

2. Prepare your cooker for grilling. If desired, add your favorite smoking wood for extra flavor.

3. While your smoker preheats, remove steak from the marinade and discard the liquid.

4. Grill over high heat until your desired temperature is hit. I recommend medium to medium rare.

5. Allow to rest for 15 minutes, before slicing against the grain. Serve immediately.

6. Serve with your favorite taco ingredients and enjoy.

Mojo Steak Sandwich

This recipe is a play on two Cuban sandwiches- the Cubano and the Pan Con Bistec. While it is inspired by these sandwiches, it loses some of it’s traditional elements by replacing the Pan Cubano (Cuban sandwich bread) with Ciabatta.
