Having people over and need a quick, delicious snack or starter? You can’t go past this ultra simple and insanely delicious deviled egg recipe. From start to finish, you can get these eggs done in less than 30 minutes.
The secret ingredient to these eggs is the Old Trapper beef jerky. It saves time, has a deep, rich flavor and brings a beautiful color to the eggs that’s hard to beat. If that’s not enough, Old Trapper jerky is smoked with real wood, which means it has an authentic and smooth flavor that you don’t get from other brands.
Below are two recipes featuring both the old fashioned (which is my favorite) and the hot and spicy Old Trapper flavors. You can make this recipe with different ingredients and make it your own, but these two recipes are how I like it best.
Ingredients
7 Hard boiled eggs
2 t Spicy Brown Mustard
1.5 t Apple Cider Vinegar
2 t Good Boy Rub (Buy yours here)
1.5 T Pigasus Sweet Rub (Divided) (Buy yours here)
2 T Diced Cowboy Candy
4 T Diced Old Trapper Hot & Spicy Jerky (Divided), (Order yours here)
1 T Cowboy Candy liquid
2 t Your favorite hot sauce.
Cowboy Candy/ Candied Jalapeno slices
7 Hard boiled eggs

Here are my tips for making the best deviled eggs:
1. Always give your boiled eggs an ice bath. It helps the shells to peel off easy (I’ll give you my exact tips on how to boil the perfect egg when you comment “Trapper” below)
2. Smoke the eggs with a little cherry wood on low for 15-20 minutes.
3. Avoid jerky that is too dry and tough to chew and instead opt for Old Trapper jerky. It is nice and tender and isn’t a huge contrast from the texture of the soft eggs.
4. The options for seasoning your eggs are endless, but I recommend some premade BBQ seasonings that are high paprika and black pepper. I used my How Low Can You Slow rubs. (Buy yours here)
5. Use the yolk from 7 eggs, but only fill 6. This allows a nice full egg.
The process for both recipes is essentially the same, it's just the ingredients that differ.
1. Boil your eggs until they are just hard boiled. Place in an ice bath for 5 minutes and then deshell them.
2. Preheat smoker to 180F and place on a chunk of cherry wood. Allow the eggs to smoke for 15 minutes. Remove from the heat and allow to rest for 5 minutes. Once cooled, cut in half length ways.
3. In a bowl, add your ingredients, saving a T of the Pigasus Rub and half of the diced jerky pieces. Add in all of the yolks and mix until well combined.
4. Using a piping bag or a spoon, add the mixture into 12 of the half eggs.
5. Sprinkle with the remaining Pigasus rub and diced jerky pieces.
6. Serve chilled or at room temperature.
Play around with the recipe and make it your own, but don't go past the Old Trapper Jerky. They make ultra tender jerky, that works so well in this recipe, as well as being smoked with real wood, so it goes so well in this recipe.
