Corn Salsa

 
 

This corn salsa is super simple, but brings a bright, fresh element to just about any meal.

Serve as a side with your favourite Mexican inspired food, or use it as a filler for tacos, tostadas, burritos, or anything else you can think up!)

What you will need


  • 2 ears of fresh corn
  • 1 red onion, finely diced
  • 2 jalapeños, finely diced
  • 1 bunch fresh cilantro, chopped
  • 2 large limes
  • 2 t Fresh cracked black pepper
  • 1 t kosher salt

Method

1. In a large pot, add corn and enough water to cover the corn (but don’t add yet) and bring to a boil.

2. Add corn and cook for 6 minutes, until kernels are tender. Remove from the heat and allow to sit for 10 minutes.

3. Remove husk and corn silk. Using a sharp knife, remove the kernels from the cob.

4. To the corn, add diced onions, diced jalapenos, diced cilantro, salt and pepper and the juice of both limes.

5. Mix until well incorporated and serve.
