Korean Style Chicken Wings

Barbecue is something which has a proud tradition going back hundreds of years, all across the world. Most of the time when I am thinking of low and slow barbecue, I am considering traditional American style barbecue, however this isn't always the case.

Korean barbecue is probably one of the most prevalent barbecue cuisines around and once you have tried it, its easy to understand why. These Korean style wings are marinated with a variety of unique and traditional flavors that when paired with sweet smoke like cherry or apple, make an amazing addition to your next barbecue.

What you will need

  • 1 Tablespoon brown sugar
  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons soy sauce
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1/2 Tablespoon fennel seed
  • 2 Tablespoons fish sauce
  • 1 Tablespoon sesame oil
  • 1/2 cup minced onions
  • 1 Tablespoon red chili flakes
  • 1/2 cup Hoisin sauce

Method

1. Mix all ingredients, except chili flakes together in a blender and pulse until roughly combined.

2. Add red pepper flakes before liberally applying to chicken wings. Allow to marinate in the refrigerator for 4-5 hours.

3. Preheat smoker to 250F and cook until wings hit an internal temperature of 160F.

4. Once wings have hit 160F, ramp up the smoker temperature to 450F or move wings to be directly above the heat source until wings hit 165F.

5. Allow wings to rest for a minimum of 15 minutes before serving with Alabame white sauce or Ranch.
