Carolina Gold sauce

Recently I shared a recipe for Alabama white sauce, which is a mayonnaise-based sauce that is fantastic for chicken, pork, and everything in between. You can check out that recipe Here.

Carolina Gold is a mustard-based barbecue sauce, that brings together just the right amount of tang and sweetness, with a little bit of heat. It is super simple to make, but don't let that fool you. This sauce is a great way to really pump up the flavors at your next barbecue.

Carolina Gold can be used as a sauce with all kinds of meats, in the same way, that you would use a more traditional barbecue sauce. For me though, it really comes into its own when served with beef. At my house, I treat it much the same as I would treat horseradish with beef. It's great on sandwiches, on the side for dipping, or as the base for a glaze.

What you will need

  • 1 cup of your favorite yellow mustard (prepared)
  • 2 T Apple cider vinegar
  • 2 T honey
  • 1 T Ketchup
  • 1 T Hot sauce
  • 1 T Worcestershire sauce
  • 1 t garlic powder

  • Method

1.In a bowl, whisk all ingredients until well incorporated.

2.Store in the fridge in an airtight container for up to two weeks.

Smoked Honey Duck

Duck has to be one of my favorite meats and when smoked, it’s even better! Duck has a much gamier flavor than chicken and is a lot more similar to red meat than white (you can even eat it medium rare!) This recipe is full of flavor, with the sweetness of the honey, the contrasting saltiness and deep umami that comes from the Soy Sauce.
